Abstract

Cell wall material (CWM) or dietary fibre was isolated from papaya (Carica papaya) after treatment with phenol buffered at neutral pH and subsequently fractioned using a sequential extraction procedure : potassium acetate buffer imidazole buffer 0.05 M Na2CO3 and 4 M KOH solutions. Fractions were analysed for uronic acids neutral sugars and in the case of the residue also for cellulose. The monosaccharide composition of the fractions was determined using gas-liquid chromatography (GLC). CWM which accounted for 1.5 of the fruit was composed of 43 cellulose 26 uronic acids and 25 neutral sugars. GLC results combined with other analyses suggested the presence of pectic polysaccharides in the water-soluble imidazole-soluble and Na2CO3-soluble fractions. Hemicellulose was found mainly in the KOH-soluble fraction. The residue contained 90 cellulose
