Abstract

Oxidation induction period is an important parameter in predicting the shelf-life of fats oils and fatty foods. Through accelerated oxidation with a continuous air flow at 98 deg. C oxidation products consisting mainly of polar compounds may be produced. The polar compounds were trapped in deionised water and the conductivity of the water measured using a commonly available conductivity meter. The oxidation induction period was determined from the time at which the conductivity increased considerably indicating the production of oxidation products. Oil containing more polyunsaturated fatty acids had a faster induction period than oil containing less polyunsaturated fatty acids. The addition of antioxidant to the oil lengthened the oxidation induction period
