Abstract

Growth of B. pseudoctenulatum F117 and B. longum BB536 in soy sauce supplemented with prebiotics was investigated in the present study. Two indigestible carbohydrates fructooligosaccharides (FOS) and inulin were used as prebiotic. It was found that soy sauce could support the growth of both organisms tested. Bifidobacterium longum BB536 grew better than B. pseudocatenulatum F117 in soy sauce. Moreover the results clearly demonstrated that addition of prebiotics stimulated a higher viable count in both organisms tested. FOS which has lower degree of polymerization was utilized more efficiently by both Bifidobacterium strains as compared to inulin. In both prebiotics used B. longum exhibited the highest population count after 48 hours of incubation.
