Abstract

Emulsions of 10 (v/v) isopropyl myristate (IPM) in a mixture of water/glycerol at various weight ratios were studied using mixed sugar-based emulsifier systems of Span20/SSE20 and Span20/SS at 30 degrees celcius. The concentrations of mixed emulsifier used were 3 5 7 and 9 (w/w). It was found that mixed Span20/SSE20 exhibited better emulsion properties than the Span20/SS system. The milky-white emulsions were very stable within the range of HLB values from 7.8 to 15.0. Phase separations occured in mixed Span20/SS systems indicating the instability of the emulsions formed. The smallest emulsion droplet formed by mixed Span20/SSE20 was 4.5mm which was obtained at HLB values between 10 to 12. Glycerol content was found to affect the droplet sizes in emulsion formed by mixed Span20/SSE20 but not with the mixed Span20/SS emulsifiers. The droplet sizes decreased from 12.5 to 4.5 mm as the glycerol content increased from 0 to 40 (v/v) for Span20/SSE20 system. Thus mixed Span20/SSE20 emulsifiers show synergistic effect as compared to mixed Span20/SS system.
