Cryoprotective effects of sucrose sorbitol and phosphates on Nemipterus tolu surimi minced fish

Abstract

Sucrose sorbitol sodium tripolyphosphate and sodium pyrophosphate were incorporated into Nemipterus tolu surimi and were effective to different extents in the prevention of freeze denaturation. From the measurement of texture and sensory evaluation sucrose was found to be the most effective cryoprotectant. The extractibility of salt-soluble proteins after 16 weeks of frozen storage indicated that gel-performing ability is affected by factor other than protein denaturation as surimi containing sodium tripolyphosphate and pyrophosphate had significantly higher values. The cryoprotective effects of phosphate addition seem to depend on the specific phosphate ion used with sodium tripolyphosphate being superior to sodium pyrophosphate
