Abstract

Bioactive peptides of fermented goat milk had many benefits the bodys regulatory system provides enough on health. This study aims to explore the fermented goat milk products as decreased malondialdehyde (MDA) and its influence on the expression of the accumulation of fat in a mouse hypercholesterolemia model. The characterization of bioactive peptides fermented goat milk products with a concentration of 3 and 5 using SDS PAGE and LC-MS-MS. Bioactive peptides fermented used as the lowering levels of MDA and the decreased expression of the accumulation of fat in a mouse model of hypercholesterolemia. The characterization of bioactive peptides (SDS-PAGE analyses) showed protein fraction Mr3KDa. The analysis of LC-MS/ MS showed three types of bioactive peptide composed of 16 amino acids. Bioactive peptides had the ability to reduce the production MDA were significantly (P0.01) and the reducing of expression of hepatic fat accumulation histopathology mouse model of hypercholesterolemia. The bioactive peptides of goat milk fermented had the ability to decrease as hypercholesterolemia.
