Abstract

Common beans are an important source of dietary protein and calories. However, the high cost of fuel and lengthy cooking times limit the consumption of common beans. To promote bean consumption and improve food and nutrition security, precooked bean products which have a reduced cooking time were introduced in the market. Despite the economic and nutrition advantages of utilizing precooked bean products, their consumption is still relatively low. This study sought to determine the factors influencing consumer preference for selected precooked bean products among consumer households in Machakos County, Kenya. Data were collected from a sample of 193 consumer households who were selected using a multistage sampling technique. Data cleaning and analysis were done using STATA computer software. Results from the Multivariate Probit model revealed that consumer preferences were significantly influenced by gender, presence of a child below 5 years, monthly income, employment, health status, household size, market distance, cooking time, fuel, color, and shelf life. This study suggests that policymakers and other stakeholders need to emphasize the nutrition and health benefits of consuming precooked bean products which could improve consumer preference for these products
