Abstract

The purpose of this research was to investigate the kinetic of oxygen uptake rate during the fermentation of acetic acid. On-line computer was to allow the direct determination of oxygen uptake rate (Qₒ₂) and the volumetric oxygen transfer coefficient (K˪a). Computer hardware system was installed with CPU models CDM 4032, tractor printer and nonstandard Analog to Digital Converter. The software included on and offline data logging, processing and regression using time sampling. Flow and computer program was described. Concentration of inoculum of 5%, 10%, 15%, 20%, respectively were identified to obtain maximum value of inoculum. The strain Acetobacter aceti ATCC 15973 was obtained from the American Type Culture Collection. The effect of agitation speed of 150, 200, 250, and 300 rpm, respectively in the alcohol concentration 5.1% were identified. The maximum value of agitation speed showed 240 - 200 rpm. The effect of alcohol concentration of 4.4608%, 5.1959%, 6.2635%, 8.2357% and 9.4453% to the fermentation efficiency were done. The maximum value 9.4453% to the fermentation efficiency were done. The maximum value of alcohol; concentration showed 8.0% to be obtain acetic acid concentration 6.061% (w/v). At a bath fermentation of acetic acid with initial alcohol concentration 4.223% at agitation rate, 250 rpm showed the values of specific oxygen uptake rate Qₒ₂, 1.60, 1.60, 1.30, 1.26 and 1.01, while the respiratory quotient, RQ, 0.155, 0.146, 0.180, 0.138, and 0.267, respectively.
