Abstract

Modified starch plays an important role in food processing industry. The properties and usage of seven types of chemically modified starches (instant starch dextrin oxidised starch acid-treated starch crosslinked starch starch ester and starch ether) are described. The information given can assist processors in choosing suitable modified starches for their products.
