Abstract
Modified atmosphere packaging MAP and low temperature 5C storage was effective in extending the shelf-life and maintaining the postharvest quality maintain fimmess reduce chilling injury symptoms of carambola Averrhoa carambola L. cv BlO fruits. These positive effects of MAP 5C treatment were attributed partly to their ability to delay ripening and to suppress the activity of p-galactosidase and polyphenol oxidase PPO. These enzymes contributed significantly to texture changes and tissue browning during ripening and storage.
