Abstract

The effects of increasing drying temperatures on soluble protein fractions and in vitro gas production of mulberry were investigated. Increasing temperatures up to 105C decreased protein solubility and increased the insoluble but slowly degradable protein without influencing the indigestible fraction implying a decrease in ruminal degradation and probable increase in rumen undegradable protein. Drying temperatures higher than 105C caused a significant decline in gas production from the insoluble but fermentable fraction as well as in the rate of gas production without influencing total gas production.
