Abstract

Mechanical injury is a major cause of quality deterioration during distribution of fresh produce and this is basically due to the mechanism of vibration and impact. The objective of this study was to determine the damage criteria and physical changes of Pisang Mas Musa sapientum var. Mas caused by vibration and impact during the simulation of truck transportation. Banana hands were packed in standard corrugated fibreboard boxes and were then subjected to the vibration and impact simulation tests at SIRIM Shah Alam. All control and treated samples were stored at 14 1C; 65-85 RH for 4 weeks in the cold room at the Faculty of Food Science and Biotechnology Universiti Putra Malaysia. The mechanical injury features percentage of blemish area peel colour changes and mould growth were evaluated at three days interval during storage. Effects of vibration were seen as blemished areas and this further established marks on the skin while the effect of impact was manifested as finger crack finger break neck crack neck break and crown crack. However the most prominent mechanical injury features caused by impact test was finger crack 6.44. Mould growth was primarily observed on blemished area and other injury wounds. There was a significant PO.05 difference in percentage of blemished area and mould score between control and treated samples. There was no significant difference found between control and treated fruits both vibrations and impacts test on peel colour changes. However percentage of blemished area peel colour and mould growth score increased significantly PO.05 with increasing vibration times and number of drops.
