Abstract

The alcohol fermentation industry in Thailand is discussed. The problems of the industry are highlighted. The major problems encountered arise from contamination by bacteria inefficient control of temperatures use of unbalanced processes mismangement and lack of process monitoring. Steps to improve the fermentation industry have involved a transfer of technology. Steps taken include the use of a new yeast strain an improved process and subaeration conditions
