Abstract
The application of enzymes in industrial processes has gained some popularity in recent years due to the inherent properties of these biological catalysts. This paper reviews some promising enzymic applications for the oils and fats industry and the use of palm oil palm kernel oil and their products will be highlighted where relevant. Enzymic processes for oil extraction lipid modification and the transformation of fatty acids are discussed with respect to their potentials for industrial application.
