Abstract

The quality changes of bighead carp kept whole at ambient temperature was monitored by measuring pH total volatile nitrogen TVN thiobarbituric acid reactive substances TBARS and sensory evaluation for over a period of 24 hr. The fatty acid profile of the white abdominal muscle was also reported. TVN and TBARS values were found to have high linear correlation with storage time. pH changes were insignificant throughout the experiment. The bighead carp was acceptable up to 12 hr of storage and this corresponded to TBARS value of 4.2 /- 5 micro mol malonaldehyde kg-1 and TVN value of 5.32 mg N per 100 g. Sensory scores also showed that odour changes were consistently lower scored than textural changes.
