Abstract

Condiments are seasonings used to flavor or “spice-up” foods. In Malaysia, both words are used interchangeably with apparently some confusion with the words flavours and flavouring systems. This paper discuss briefly these terms and looks at the fundamentals of developing so-called condiment or seasoning. The authors will attempt to provide food manufacturers and (suppliers) with common ideas and notions so that they can communicate more effectively in developing better food products. Much of the discussion will draw upon the authors’ experience as an established and reliable supplier of key flavouring ingredients for production of “condiments/seasonings.
