Abstract

For the production of flavour compounds different concentrations of various elicitors such as maltose casein hydrolysate sodium alginate and yeast extract were used. Treatment of callus with casein hydrolysate increased the limonene production by 11.1 per cent. However other flavour compounds were found to be less than the control. Treatment with maltose and sodium alginate sharply decreased the amount of flavour compounds. Treatment with yeast extract produced the highest amounts of p-cymene 13.57 per cent and beta-pinene 1.89 per cent compared to the control. However the limonene production was decreased as the concentration of supplied yeast extract increased.
