Abstract
In this article a comparison between the flavour profile of the fresh and stored sugarcane juice was done. Volatile constituents of fresh and stored sugarcane juice saccharum officinarum yellow cane were extracted using vacuum steam distillation VSD technique. Gas Chromatography GC Gas Chromatography-Mass Spectrometry GC-MS were used for separation of the volatile compounds and identification of its molecular weight.
