Abstract

Three species of local citrus fruits namely the musk lime (Citrus microcarpa) the common lime (C. aurantifolia) and the local mandarin orange (C. suhuiensis) were used in product developmental studies in the Food Technology Division MARDI. This article outlines some aspects of the chemical and physical characteristics of these fruits in relation to their processing potentials and highlights processing technologies for beverages dried salted and candied products.
