Abstract
Vacuum and pressure of calcium chloride solution (2-8) at 32 kPa and 115 kPa respectively delayed the softening of Kensington Pride mangoes by 8-12 days at 20 deg. C. Peel colour remained partially green when fruit were ripe and the fruit showed peel injury. This peel injury was not decreased by lowering the pH of the calcium chloride solution. However increasing the temperature of the fruit or the calcium chloride solution or packaging the fruit in sealed polyethylene bags or in cling or shrink wraps after calcium treatment significantly decreased the level of injury. Wrapping fruit in polymeric films without the use of calcium chloride also appears to be a promising technique as ripening was significantly delayed without peel injury and undesirable retention of excessive green colour
