Abstract

Utilisation of food-waste in fermentation involves problems in the variability of waste composition and availability, in the risk of putrescence and contamination, in the location of waste sources and in imposing demands for skilled labour. Waste utilisation should thus be considered as part of an overall wealth-creation operation together with the process generating the waste. Conventional fermentation techniques may be inappropriate for waste utilisation in having exacting requirements for nutrients, plant construction and operation, and in producing highly polluting effluents. Consideration should be given to simpler fermentation techniques with which commercial fermentation products are manufactured economically on a small scale and which are well established in South East Asia.
